Sausage Muffins

You Will Need:

1 lb. mild breakfast sausage

2 cups all purpose flour

1 tsp each, kosher salt + baking powder

1 cup milk

1 large egg

3 TBSP butter, melted and cooled.

3 TBSP of oil (this can come from your cooked sausage!)

1-2 cups of shredded cheddar cheese (shred it yourself!)

Preheat your oven to 350 degrees. Spray a muffin pan and set aside. In a skillet, brown your sausage and allow to cool. In a bowl mix your dry ingredients an set aside. In a measuring cup mix the milk, egg and butter(add the oil if needed or just wait and add your sausage fat with your sausage). Now pour your wet ingredietns into your dry, stirring until just combined. Add the shredded cheese and cooled sausage and combine. Fill the muffin tins with batter and bake for 20-25 mins or until a toothpick inserted in the middle comes out clean.

For a Mexican style muffin, use chorizo and Pepperjack cheese instead of breakfast sausage and cheddar!
