Homemade Chocolate Chip Granola Bars

-4 cups oats
-4 cups Rice Krispies
-1 stick butter
-1/2 cup brown sugar or I used @thegatewayfarm Maple Sugar 😋
-2/3 cup of honey
-pinch of salt
-1 TBSP vanilla
- mini chocolate chips

 

Start by toasting 4 cups of oats in the oven at 350 for a few minutes or until they start to brown and then set them aside to cool.

In a saucepan, you want to add 1 stick of butter, 1/2 cup of brown sugar or maple sugar, 2/3 cup of honey and a pinch of salt. Allow that to come to a simmer, turn the heat off, and add about 1 tbsp of vanilla.

To a large bowl you want to add your cooled oats along with 4 cups of Rice Krispies and give it all a stir. Then, add your melted butter and sugar mixture and stir that all together as well.

Once everything is mixed, you want to spread everything out in a large baking sheet and press it down as firmly as you can. Then you want to let that cool for a while before adding in your chocolate chips.

Once the chocolate chips are added you want to let it sit overnight and cut it into bars the next morning. Enjoy!
