Instructions
1. Mix the dry ingredients:
In a large mixing bowl, whisk together the flour, sugar, salt, and baking powder until well combined.
2. Combine the wet ingredients:
In a separate bowl, whisk together the melted butter, milk, egg, and vanilla extract.
3. Make the batter:
Slowly pour the wet ingredients into the dry ingredients. Stir gently with a dough hook or wooden spoon until just combined — the batter should be slightly lumpy. Avoid overmixing for the fluffiest pancakes.
4. Cook the pancakes:
Heat a skillet or griddle over medium-high heat. Add a little melted butter to coat the surface.
Pour about ¼ cup of batter per pancake onto the hot surface.
5. Flip and finish:
Cook until small bubbles form around the edges and the bottom is golden brown, then flip and cook the other side until done.
