1 lb. lean ground beef
1/2 small onion, minced
2 cloves garlic, minced
1 egg
1/3 cup breadcrumbs
1 TBSP dry ranch powder
1 TBSP avocado oil (omit if your beef is fatty)
Form the meatballs evenly (I used a small ice cream scoop) and set into a casserole dish. I put mine into a preheated 400 degree oven with the broiler on low and cooked for about 4 mins on one side and then flipped them, broiled for 2 more mins, added in the marinara into the casserole dish and turned the oven down to 200 degrees without the broiler to allow them to finish cooking(15 mins or so). Then I assembled everything just as I did in the photos finishing them off in the broiler just until the cheese was melted. So quick and delicious! I served them with a green salad with ranch dressing! Enjoy!
