Mexican Style Sausage Balls

•2 cups Bisquik
•1 block pepper jack cheese, shredded
•1 pound RHF pasture raised pork chorizo
•1 block of cream cheese

Preheat oven to 350. Spray two baking sheets well. Shred your cheese and set aside. Mix together your chorizo and cream cheese (I use my Kitchen Aid stand mixer to do this). Once those are blended well, add in your Bisquik slowly with the mixer on low. Once that is mixed together well, add in your cheese the same way. When your ingredients are all mixed together use a small scoop to form your balls evenly(it’s a lot less messy using the scoop). Bake them for 20ish minutes rotating them 1/2 way through to keep them evenly browned. Serve them up with sour cream! Add some lime juice and cilantro to your sour cream to really amp it up!
