Ingredients:
1-2 lbs. ground beef, pork, venison, etc. You choose!
1 large onion, diced
3 cloves of garlic, minced
1 -28 oz can crushed tomatoes
4 cups of cooked pinto beans
1 - 6 oz can tomato paste
4-6 cup of water or broth
1 1/2 TBSP chili powder
2 tsp cumin
1-2 tsp salt
1/4 tsp pepper
1/4 tsp cayenne (or more for more spice)
1 1/2 tsp garlic powder
1 1/2 tsp onion powder
1/2 tsp dried oregano
Brown your ground beef along with your onion in a large pot. When the meat is browned and onion is translucent, add your garlic and stir until fragrant-about a minute or so. Add in all of your seasonings and stir. Add your tomato paste and stir well until your meat and tomato paste are combined. Add beans, crushed tomatoes and water or broth and stir well. Bring your pot to a simmer, turn to low and put a lid on. Simmer on low, stirring often to keep anything from burning on the bottom of the pot, for 30 mins. Serve hot topped cheese, sour cream, cilantro and/or jalapeños. So good with Mexican cornbread. Enjoy!
