Mexican Rice

Ingredients:

  • 1 1/2 cup jasmine rice, rinsed
  • 1/2 an onion 
  • 1 tomato, cut into quarters
  • 1 clove fresh garlic
  • 1 tsp chicken bouillon
  • 1 tsp kosher salt
  • 1/2 tsp chili powder
  • 1/2 tsp cumin
  • 3-4 cups of water

Put everything but the rice and the water into a food processor. Add a good spash or two of water but do NOT go above your max liquid fill line. Pulse until eveurhing is finely combined and there are no chunks left. In a large skillet add your butter and melt. Throw in your rinsed rise and stir, cooking for 1-2 minutes. Add in your mixture from your food processor along with an additional 3 cups of water. Stir well and put on the lid. Turn your eye WAY down to a low simmer and cook for 20 mins. Turn off your heat and let the rice finish steaming. Fluff with a fork and serve!
