Peanut Butter Pie

Ingredients:

-One graham pie crust, or Oreo pie crust

(I sometimes make home made graham crust - but store bought is perfect, too!)

-8 oz. block of cream cheese, softened

-8 oz. tub of Cool Whip, thawed

-1 cup of Peanut Butter

-1 cup Powdered Sugar

Directions:

In a large mixing bowl, add your block of cream cheese and powdered sugar. Use a hand mixer to blend until well mixed and smooth. Add in your peanut butter and mix until well combined. Now add all but a couple of large spoon fulls of your cool whip, and fold in with a silicone spatula until well incorporated. You can use your hand mixture for the cool whip, but it’ll make your cool whip flat and your mixture won’t be quite as fluffy. Once its all combined well, spoon this mixture into your pie crust and smooth out well. Add your remaining cool whip on top of your peanut butter mixture and smooth gently on top. Put your lid back onto your pie and refrigerate for several hours in order to let your pie set up well! This is such a quick and delicious dessert for any occasion. I often double the recipe and make two pies - one to eat and one to give! It is also DELICIOUS topped with a drizzle of chocolate syrup!
