Tater Tot Casserole

Ingredients:

-1 bag of frozen tater tots

-1 lb. Ground Beef

-A mixture of leftover veggies that you may have or that are your favorite.

(Ideas are corn, peas, green beans, carrots, onion, mushrooms, garlic, etc.

I use whatever I have in my pantry and fridge!)

-1 can of cream of mushroom soup

-1 TBSP Worcestershire sauce

-1.5 cups of chicken stock

-2 cups shredded cheddar cheese

-salt and pepper to taste

Directions:

Brown your ground beef in a large oven safe skillet with extra room (I use my cast iron skillet). Once your beef is almost done go ahead and add any veggies that may need to cook a big like your onion, garlic or raw carrots. Once those are fairly soft I add my canned or frozen veggies in and give them a good toss, turning off the heat at this point. Add in your cream of mushroom, Worcestershire sauce and enough chicken stock to make it all come together nicely and not be too runny. Season well with salt and pepper as needed. Now spread it our evenly in your skillet and top with your shredded cheese, then top that with your tater tots. Put the whole skillet into the oven and cook according to your tatertot baking directions which is usually 400 or so degrees for 20-25 mins. Your mixture should be bubbly underneath and your tater tots nice and brown. Serve this one pot dish up and ENJOY the small amount of dishes you’ll have to clean up afterwards. Hope you love it!
