Cheesecake Squares with Fresh Peaches

Ingredients:

2 sleeves graham crackers

1 stick butter, melted

2 - 8 oz. blocks of cream cheese, softened

3 eggs (I used 2 large duck eggs)

3/4 cup sugar

1/3 cup sour cream

1 tsp vanilla

2 ripe, thinly sliced Boozer Farm peaches

2 TBSP brown sugar

Start by preheating your oven to 350 degrees and spraying a 8x8 or 8x12 pan.

Crush your graham crackers finely in a food processor, then drizzle in your melted butter and pulse a few more times to combine. Pour the graham cracker mix into your pan and press firmly down into the bottom making it as even as possible, then set it aside.

In a bowl mix your cream cheese and sugar until fluffy. Add in your vanilla, eggs and sour cream one at a time mixing in between each addition. Pour into your pan on top of your crust and slowly shake and tap until evenly distributed across the top.

Gently lay those juicy peach slices all over the top of your cream cheese mixture and then sprinkle the tops with brown sugar.

Bake your dish for 45 minutes. After 45 mins, turn off the oven and allow the dish to sit inside the oven for 10 minutes. After 10 minutes, remove the dish and allow it to COOL COMPLETELY before slicing - even overnight if possible! Once they’ve set then can be sliced more easily and will look beautiful on a plate for display!
