Moma’s Potato Salad

No respectable barbecue or picnic in the south is complete without a side of potato salad! This classic version is just like Moma used to make. Enjoy!

You Will Need:

6 large russet potatoes, peeled and diced
2 large eggs
1 cup of mayonnaise
1 tbsp yellow mustard
2 tsp sweet relish
1-2 tsp salt
1/2 tsp pepper

Start by covering your peeled and diced potatoes and eggs in cold water, bringing them to a boil on the stovetop on medium/high heat. Allow to boil until your potatoes are fork tender, about 15-20 minutes. Drain your potatoes and eggs in a colander and add back into your pot. Crack and peel your eggs and chop well. Add them back into your potatoes along with all of your other ingredients. Salt and pepper according to your preference and mix well. Taste and see if you’d like to add any more of your ingredients. Once it’s to your liking, pour into a dish and cover with Saran Wrap. Allow to cool then pop it into the fridge for a few hours.
