Mississippi Mud Cake with Fudge Icing

You Will Need:

For the cake:

- 2 cups all-purpose flour

-1.5 cups sugar

- 1/2 cup brown sugar - packed

- 3/4 cup cocoa powder

- 2 tsp baking powder

- 1 1/2 tsp baking soda

- 3/4 teaspoon salt

- 3/4 cup oil

- 2 eggs

-1 tsp vanilla

-1/4 cup milk

-1/3 cup sour cream

-1 cup boiling water

- 1 bag of mini marshmallows


For the icing:

-1.5 cups of granulated sugar

-1/2 cup cocoa powder

-1/2 cup milk

-1 stick butter

-1 tsp vanilla


Preheat your oven to 350 degrees and spray a 9 x 13 pan. In a bowl combine your flour, sugars, cocoa powder, baking powder, baking soda and salt. In a separate bowl, whisk together your oil, eggs, vanilla, milk, and sour cream. Combine your wet ingredients into your dry until just combined. At this point I get out my hand mixer. Now get your boiling water and add a little to your mixture at a time mixing along the way with your hand mixer until its all added in. Now turn your mixer on medium and beat for about one minute to incorporate as much air into the batter as you can. Pour the mixture into your pan and bake for 30-35 minutes or until the toothpick trick comes back clean.

Take the cake out of the oven and immediately top with your marshmallows. Neatly tuck away and stack as many on the top as you can, and return to the oven for a couple more minutes to let the marshmallows get gooey and melty. Now, get the cake back out of the oven and set your cake pan on a cooling rack to cool. You'll want to let it cool as much as possible and let the marshmallows set before pouring on your icing. If the marshmallows are still sticky, you'll make a mess trying to spread your icing! 

To make your icing, combine your sugar, cocoa powder and milk in a small saucepan. Bring to a boil and whisk constantly for one minute. Remove from heat and add in your stick of butter and vanilla and whisk until melted and combined. Slowly pour your icing all over the top of your cake and marshmallows, making sure to get all those nooks and corners! Allow to sit for one hour before serving. Enjoy!


If you like the traditional Mississippi Mud with nuts - you could add pecans to the icing before pouring onto the cake!
